Pork tenderloin in mushroom Marsala

Season with salt and pepper In cast iron. Sear tenderloin with high heat in oil. Preheat oven to 390 deg

Place cast iron in oven. Bake for 18 min remove from skillet.

Sauté mushrooms with 1tbsp butter and a splash of wine. Remove.

Sauté onion garlic and mushroom stems. Make rue.

Add wine and chicken broth add tarragon reduce by half.
- 6
Add cream. Bring to simmer for 3 min. add everything back into cast iron. cook 5 min more min. Thicken with corn starch, if needed.

Remove from heat and cut pork into 1/2 inch madilions. Serve with potatoes or egg noodles
