Steps
- 1
First of all wash and pat dry all the vegetables. Cut french beans and carrots into 1 inch pieces. Cut cauliflower into florets.
- 2
Now blanch all the vegetables separately into boiling water and take them out in a colander. Do not boil the vegetables, just cook them for 4 to 5 minutes so that vegetables are tender but crisp. Spread all the vegetables on a kitchen towel and let it dry for 3 to 4 hours under the fan.

Heat oil and add mustard seeds. When it crackles, add hing, curry leaves and slit green chillies. Now add vinegar to it and give it a boil then turn off the heat. Let it become warm.
- 4
Now add all the vegetables to a big bowl and add turmeric powder, chilli powder, mustard splits and salt to it and pour the tadka over it. Mix it well and cover and keep it for 8 to 10 hours. Keep stirring in between every 2 to 3 hours. You can adjust the amount of salt and chilli powder before storing the pickle. This pickle can be stored in an airtight container in the refrigerator for two weeks.
