First thing first boil the noodles with a tsp of salt and oil on a high flame for 7-8 minutes. Cook it only 80% then drain the water and wash it with cold water. After that add a tbsp oil on the boiled noodles and mix very gently to avoid sticking even after cool down.

These are the vegetables which I have used. You can add as many Veggies as you like and you can even adjust the quantity as per your like only make sure they are finely chopped or shredded.

In a pan add 2 tbsp oil once get heated add chopped garlic saute it then add the chopped ginger followed by sliced green chillies. Saute it till the rawness goes away. It will take 2-3 minutes.

Then add the sliced carrots and saute for 2 minutes. Then add the shredded cabbage and mix well. Cook everything on high flame. After 3-4 minutes add the sliced capsicum and saute. Cook it till it get a bit soft but not soggy.

Now add soya sauce, white vinegar, red chilli sauce, green Chilli sauce, salt and mix very well. So less on salt as we have already added salt while boiling the noodles and all the sauces have salt in it. Now cook for 2 minutes.

After that add tomato sauce or ketchup and mix very well then add the boiled noodles and with the help of 2 spatula mix it well very gently. Mix it from top to bottom. Better to give it a toss 5-6 times by this it will mix well and not even broke. Then add the finely chopped spring onion greens and whites and chopped Coriander leaves and leave few for garnishing. Mix it well again and cook for 2 minutes and off the flame.

Serve hot and enjoy with your friends and family. Enjoy it as a snack or as a starter in the party. Even kids enjoy having it in their lunch box. You can add more veggies to make it more healthy and yummy.
