This dhokla is very tasty on its own, so it doesn't matter if you serve it without any chutney/sauce. They are quite filling and satisfying, hence ideal for picnic, brunch or light dinner. It can be served as a side dish or as a main dish (for light dinner or brunch). It will definitely impress your guests if served in a get together or kitty.

This dhokla is very tasty on its own, so it doesn't matter if you serve it without any chutney/sauce. They are quite filling and satisfying, hence ideal for picnic, brunch or light dinner. It can be served as a side dish or as a main dish (for light dinner or brunch). It will definitely impress your guests if served in a get together or kitty.

Combine ingredients for green chutney and grind it. No need to add water due to the ice cube. Ice cube refrains the chutney from heating up during grinding so that the chutney maintains its green colour for a longer time. This chutney has to be sweet as it goes well with dhokla.

Combine 1 tcup sooji and 1/2 tcup curd in a bowl well. Add about 1/2 tcup water little by little and mix.

Add 1 tsp oil and 1 tsp g-g-g paste. rest it aside for minimum 10 min.

Take in a bowl onion and capsicum- 3 tbsp of each. Take 4 tbsp of boiled sweet corn, 4 tbsp grated cheese and 1 tbsp chopped coriendar (optional). Add 1/4 tsp chilli powder, 1/2 tsp chilli flakes, 1/4 tsp salt and 1/4 tsp black pepper powder. Combine everything very well.

Take a dhokla plate with not more than 4 inch diameter. Brush it with oil. Prepare a double boiler and place the plate in it. Cover and let it heat up on high flame. Meanwhile, let's work on our batter. The batter should be smooth and easy-to-drop consistency. Add a little water if it feels thick(most probably you won't have to add water, but sometimes it depends on sooji). Divide the batter into two equal portions.

Add 1 tsp (half the amount) of eno in one portion of the batter. Take out the hot plate from the boiler/steamer. Add 2 tsp water over eno to activate it. Quickly stir it up till the bubbles are evenly divided in the batter. Quickly pour the batter in the prepared plate. Tap the plate a bit to make an even layer of the batter. Quickly return the plate to the steamer, cover and steam for about 3 min on medium flame.

After 3 min, you'll find the batter risen and set. Take out the plate. Add more water in the steamer if required. Cover the steamer and lower the flame while on a waiting mode. Apply a layer of green chutney or pizza sauce over the dhokla. Then evenly spread the stuffing all over dhokla.

This step has to be done with speed. Add eno in the second portion of the batter, stir well and pour it over the stuffing. Spread the stuffing evenly. Sprinkle some black pepper powder over it and return the plate to the steamer, cover it, increase the flame to medium high and steam for 15-20 min.

Turn off the flame and let dhokla cool down completely (you can cut dhokla neatly if they are at room temperature). Cut dhokla into your desired shape. Serve with green chutney.

Suggestions from my family: 1. Try the same batter and Mathis for sandwich dhokla (dhokla with green chutney). 2. Try mixing the stuffing with green chutney too.
