Cajun Turkey Steaks With Pineapple Salsa
Originally a Goodfood recipe, Its pretty original I didn't adapt it very much. Its a healthy balanced nutritious meal.

Reserve two tablespoons of the diced onions. Heat the olive oil in a saucepan. Add the rest of the onions and half of the pepper. Fry for 3-4 minutes until the onions and pepper are soft. Add the rice and pour in the stock. Add the kidney beans and season with salt. Bring to a boiling point, stir and cover with lid. Reduce heat to a simmer and cook for about 15 minutes or until the rice is cooked through.

Coat the turkey in the cajun spice and griddle or fry for 4-6 minutes per side. I air fried my turkey steaks at 200c for about 10 minutes.

To make the salsa add the pineapple, reserved onion and the other half of the pepper to a bowl as well as the chilli and lime juice. Season with salt and mix everything together. Note: As this was being served to kids with plain-ish none cajun spiced turkey steaks I didn't add any chilli or salt.

Serve the turkey immediately along with the rice and salsa.
