Unique Onion Gratin Soup Made with Sandwich Bread

I make this often at home. My husband and child love it.
If you don't have sandwich bread, you can of course use french bread. If the soup is tepid, the bread will soak it up, so be sure to place the bread in hot soup, and place it in the oven immediately. Recipe by Anna.

Steps
- 1
Mince or thinly slice the onion.
- 2
Cut the bacon into slices about 5 mm thick.
- 3
In a small sacuepan, heat the butter. Add the onions and stir over low heat, cooking slowly until they turn amber in colour.
- 4
Add the bacon to the pot. Separate the slices and cook until they are crispy.
- 5
Add the water. When it comes to a boil, add in the soup stock cubes, salt, and black pepper to taste.
- 6
While working through Step 5, cut the bread into 9 separate pieces and toast. Preheat the oven to 430°F/220°C.
- 7
Place the hot soup into individual heat-safe bowls. Add the bread and then the cheese. Quickly bake into the oven for 10 minutes.
- 8
Enjoy the soup while it is piping hot.
