Heat oil in Kadai and saute spices (cinnamon,cloves, bay leaf). Add finely chopped onion and saute well. When the onion becomes brown, add finely chopped tomato and saute until soft and mushy.

Now add chopped Vegetables and salt. Saute it for minutes and add enough water to cook vegetables. Mix them well. Cover the lid and boil until vegetables are almost cooked.

For masala paste keep all ingredients ready. Then add it in mix grinder and make fine paste using little water.

Then add prepared masala paste to cooked vegetables and mix it nicely. Now add 1 or 1/2 cup water. Don't add more water. Just check thickness of gravy as per you want. Now cover and cook for 5 to 10 minutes.

At last add chopped coriander leaves and stir well. Off the flame

Serve hot mix Vegetable Korma with puri, dosa, chapati and idli.
