Frittatas are always a great option for an appetizer or a quick dinner. Combining them with vegetables is always a winner. But presentation matters too, and I’ve found that adding a decorative touch makes the frittata special—and it’s fun!

Separate the stems from the leaves of the Swiss chard and wash them well. Boil the stems and leaves separately in lightly salted water, then drain.

Wash the potatoes, poke them with a fork, and microwave on high (750W) for 10–15 minutes, turning them halfway through. Peel and slice into rounds.

In a bowl, combine the eggs, Parmesan cheese, chopped Swiss chard leaves, and a pinch of salt.

Lightly oil a skillet and arrange the potato slices around the pan. Weave the Swiss chard stems together and place them in the pan as well.

Pour the egg mixture into the skillet, cover, and cook over low heat for 15 minutes.

Flip onto a serving plate and enjoy hot or cold.
