In the Mixer jar add all ingredients of green chutney and grind to make smooth green paste.

Boil the potatoes in water. Then peel and mash the potatoes in a bowl. Crush garlic and green chillies together in mortal-pestle.

Tempering:-
Heat oil in a small Tadka pan. Add mustard seeds and curry leaves and stir for about 5 seconds. Then add crushed garlic-chili, asafoetida, turmeric powder. - 4
Pour this tempering into the mashed potatoes. Add chopped cilantro, salt and mix well. Then make small to medium balls out of the mashed potato mixture.

Making gram flour batter:-
In another bowl, add gram flour, turmeric powder, asafoetida, pinch of baking soda, coriander powder, salt and water to make a smooth and thick flour. The batter should not be too thick or thin. - 6
Heat oil for frying in a pan. Dip potato balls in a little gram flour and coat. Put the gas on medium heat. Gently add gram flour coated potato balls in hot oil and fry till golden.

When one side is lightly crunchy and golden, turn each vada with a spoon and fry on the other side. Once fried, remove them to paper towels. Make all the potato vada in this way. Fried 3–4 slit green chilies coat with pinch of both salt & turmeric powder

Cut pav without breaking it into 2 part and place hot vada inside. You can also spread green or lasun chutney inside pav before placing vada. Serve Vada Pav and Batata Vada hot.
Serve with chillies, garlic and green chutney.
