I like Okra/Lady's finger/Bhindi cooked fry. This type of fry of Okra is popular in most South Indian states. The flavour of the fried dals, using Sambar masala and dry mango powder , make a delicious fried okra masala dish.

I like Okra/Lady's finger/Bhindi cooked fry. This type of fry of Okra is popular in most South Indian states. The flavour of the fried dals, using Sambar masala and dry mango powder , make a delicious fried okra masala dish.
Steps

Heat 1+1/2 tsp oil in a wider pan. Stir fry the chopped bhindi for 3 minutes and then fry on medium to low flame till 3/4 (75%)cooked. Keep aside the cooked bhindi.

To the same pan add rest remaining oil. Add ponch phutan, hing, dry red chilli and allow to splutter the masala seeds.

Mix both the dals to the pan and fry for a minute. Add green chilli, curry leaves, onions and chopped ginger. Sauté till onions are softened.

Add salt, turmeric and then dessicated coconut. Fry for a minute.

Add dry mango powder and mix well. Mix the 3/4th cooked bhindi. Add the Sambar powder and ensure that it coats well with bhindi.

Cook till the bhindis are done. Serve with Roti and steamed rice as a side dish.
