Suddenly craving Saigon-style broken rice with grilled pork chop.

Rinse the broken rice and cook as you would regular rice.

Combine all the pork chop marinade ingredients and marinate the pork chops for at least 12 hours in the refrigerator.

Finely chop the green onions, add oil and a pinch of salt, then microwave for 1 minute.

Cut the glass noodles into small pieces. Soak the wood ear mushrooms in hot water, then chop finely. Mix all the egg meatloaf ingredients together, reserving the egg yolks separately.

Preheat the air fryer for 10 minutes at 356°F (180°C). Place the pork chops on the grill rack. Put the egg meatloaf on the lower rack. Cook for 20 minutes at 356°F (180°C). Open the air fryer and pour the reserved egg yolks over the top of the meatloaf. Cook for another 10-15 minutes at 356°F (180°C).

Combine sugar, fish sauce, and water in a saucepan and bring to a boil. Let cool, then add lime juice and chopped chilies to finish the dipping sauce.
