My daughter sometimes has a bit of constipation so I wanted to make her a healthy and delicious snack that's full of dietary fiber.

Cocoa powder clumps up in high humidity, so if that happens, sift it before use.

Ingredients

12 servings
  • 100 gramsPancake mix
  • 1 tbspCocoa powder
  • 3 tbspMilk
  • 1 tbspOlive oil
  • 1Egg
  • 60 gramsBurdock root
  • 5 gramsButter (to sauté the burdock)

Steps

    Skin and mince the burdock root, soak in water to remove the astringency.

    Add butter to a heated frying pan, and cook the burdock root.

    Add the cooked burdock root and all the other ingredients to a bowl and mix together.

    Apply a thin layer of olive oil (not listed) to a donut mold and use a spoon to pour the batter in. If you spill any batter on the mold, wipe it off.

    Bake in the preheated oven at 180 ℃ for about 20 minutes. Once they've cooled, remove from the mold. Top with powdered sugar if you like and they're complete.
