In a saucepan add vegetable oil, followed by the garlic and ginger, cook and stir for 30 seconds and whisk in the brown sugar, oyster sauce, red pepper flakes, soy sauce, vinegar, and water. Cook until slightly thickened, about 5-10 minutes, set aside.

Marinate the chicken with corn starch, salt ginger garlic paste, black pepper. mix well.

Heat up a pan. Add oil and add the chicken. Toss and stir fry until the surface turns white. set aside.

In a pan. Add the chicken and do a few quick stirs before adding the Sauce. Stir continuously until the sauce thickens and the chicken is cooked through. Add the capsicum and spring onion, stir to combine well.

Garnish with sesame seeds. Serve immediately over rice.
