  1. 1Double 8 Cattle Company Fullblood Wagyu Chuck Eye Steak
  2. 1/2 TSPThyme (minced)
  3. 1/2 TSPSage (minced)
  4. 1/2 TSPChive (minced)
  5. 1/2 TSPOregano (minced)
  6. 1Shallot (minced)
  7. 1 TSPGarlic (minced)
  8. 2 TBSPOlive Oil
  9. 1 TBSPRed Wine Vinegar
  10. Salt & Freshly Ground Black Pepper (to season)
  11. Mediterranean Salad
  12. 4 CUPArugula
  13. 1 CUPGarbanzo Beans (drained)
  14. 1/2 CUPBlue Cheese or Feta
  15. 2Lemons (juiced)
  16. 3 TBSPOlive Oil
  17. 1 TSPSherry Vinegar
  18. 1/2 CUPRoasted Red Pepper (thinly sliced)
  19. 1/4 CUPKalamata Olives (pitted)
  20. 1Red Onion (thinly sliced)
  21. 1/4 CUPSun Dried Tomatoes
  22. 1Zucchini (cubed)
  23. Salt & Freshly Ground Black Pepper (to season)

    PREPARING THE MARINADE
    In a bowl, combine the minced herbs (thyme, sage, chive, oregano) with the minced garlic, minced shallot, 2 tablespoons of olive oil, and red wine vinegar. Mix ingredients until combined. This is your marinade.Pour the marinade over the Fullblood Wagyu chuck eye steak, completely coating both sides. Season the steak with salt and freshly ground black pepper. Put the Fullblood Wagyu chuck eye steak in the fridge to marinate for 2 hours.

    PREPARING THE MEDITERRANEAN ARUGULA SALAD
    Place the arugula, blue (or feta) cheese, garbanzo beans, kalamata olives, and sun dried tomatoes in a bowl. Cube the zucchini, and add it to the bowl. Thinly slice the roasted red peppers and red onion, and place both of them in the bowl. Add the juice of two lemons, the olive oil, and sherry vinegar to the bowl. Season with salt and freshly ground black pepper. Toss to combine all of the ingredients.

    FINAL STEPS
    After the steak has marinated for two hours, remove it from the fridge. Allow the steak to reach room temperature (usually takes about 20 minutes). Preheat your grill to 450°F. Place the steak on the grill, and cook for 6-8 minutes per side or until an internal temperature of 120°F. Remove the steak from the grill and allow it to rest.After the Fullblood Wagyu chuck eye steak has rested, thinly slice the steak on a bias.

    Serve the sliced steak with the Mediterranean arugula salad, and enjoy!
