These little rolls are super soft and a pleasure to eat. They go with everything—always a hit!

Mix the fresh yeast with the warm water until well combined.

In the bowl of a stand mixer fitted with a dough hook, add the flour and salt and mix. Add the yeast mixture, milk, and olive oil. Mix on speed 2 for 3 minutes, just until a dough forms.

Cover the bowl with a towel and let the dough rise in a draft-free place for 2 hours, until it doubles in size.

Punch down the dough and shape it into 4 to 6 small balls.

Cover again with a towel and let rise for another hour. Lightly moisten the rolls and sprinkle with rosemary.

Preheat your oven to 400°F (200°C) with convection. Bake for 20 minutes. Let cool on a wire rack.
