My mother used to prepare this for me often, but I realized recently that it's a strange dish for some, so I decided to upload this recipe. Looking back now, I think the dish may be for the elderly...

1/4Chinese cabbage
1i used canned tuna and a pack of chikuwa Any proteins (canned tuna, chikuwa, pork, atsuage, etc)
3 tbspMentsuyu
2 tbspMirin
1 tspSalt
3Egg (large)
1Shredded nori seaweed, Shichimi spice

Steps

Combine the Chinese cabbage cut into bite-sizes, whatever protein you prefer, mentsuyu, and mirin in this order in a pot or pan with a lid. Heat the pot or frying pan, add salt when the cabbage softens and the flavor has absorbed. Season well.

Pour the beaten eggs, and finish cooking when the eggs are soft-set.

Pour over rice and enjoy. It can also be served as a side dish.
