We love pasta with this sauce and we buy it at least once a month, so we wanted to try a homemade version. We used most of the ingredients from our garden, so we had fresh herbs, but you can also use dried ones.

We love pasta with this sauce and we buy it at least once a month, so we wanted to try a homemade version. We used most of the ingredients from our garden, so we had fresh herbs, but you can also use dried ones.
Steps

Wash and roughly chop tomatoes, remove green parts, set aside. Peel and chop onions, carrots and garlic.

In a bigger pot, cook onions with garlic in oil until golden brown, then add tomatoes and carrots. Add sugar, vinegar and other spices and cook uncovered for 45 minutes on low heat. Stir occasionally to prevent burning.

Blend hot sauce with a blender, then strain through a sieve. Cook for another 5 minutes and pour into jars. Close the lids tightly, turn upside down for a few minutes, and let the jars cool slowly under the blanket for 24 hours.
