Easy German Potatoes with New Potatoes

While we were out eating dinner, my husband told me that out of all potato dishes, German potatoes are his favorite. So I thought that I would try to make better German potatoes than the one we had that night.
If you're using new potatoes, you don't have to peel the skin. Just wash them well and remove any sprouts!
-If you don't have any garlic powder:
In the beginning of making this dish, cook some sliced garlic until crispy. Once crispy, remove onto a paper towel. When adding the seasonings, grab the crispy garlic and crush them in the palm of your hand when adding to the dish. Recipe by asaco*

Steps
- 1
Since I used new potatoes, all I had to do was wash them. Use a scrubbing brush to thoroughly get rid of all the dirt. The right potato is before I washed it, the left potato is after.
- 2
Cut the potatoes into 4-6 pieces and microwave at 600 W for 5-6 minutes. (Cover them with plastic wrap so that the moisture doesn't evaporate.)
- 3
Slice the onion as shown in the photo. (Slice against the grain.)
- 4
Cut the bacon into pieces as shown in the photo. (If you want larger slices, feel free to slice it up larger.)
- 5
Heat olive oil in a frying pan and cook the bacon until crispy. Add the onion and cook until tender. Add the microwaved potatoes, which are soft enough that a toothpick slides through easily.
- 6
Use a wooden spoon to gently mash the potatoes (as if cutting them), and mix with the onion and bacon. Season with salt, pepper, garlic powder, and basil. Serve on a plate and garnish with parsley to finish.
