Preparation of Daikon Radish for Making Oden Hot Pot in a Pressure Cooker

I figured that since "buri daikon" (stewed amberjack and daikon radish) tastes good made in a pressure cooker, so would daikon radish for an oden hot pot.
Be sure to carefully read the instructions for your pressure cooker. Be sure to serve the dashi soup stock with the stewed daikon radish. Recipe by Kurukurupaseri

Steps
- 1
Cut the daikon radish into 2-cm thick rounds, then peel the skins. Shave the sharp edges of the daikon with a peeler.
- 2
Arrange the daikon in a pressure cooker, add the dashi stock granules and water, cover with the lid, then heat. Once the pressure cooker valve starts to jiggle, reduce to low heat and cook for 15 minutes.
- 3
Turn off the heat, and set aside until the pressure releases naturally. Stew them up with other oden items in oden broth and enjoy.
