Add a little oil to the bottom of the slow cooker.

Thinly slice the onion and place it on the bottom.

Cut the tomatoes, eggplant, zucchini, and potato into large chunks and layer them over the onions.

Add the unpeeled garlic clove, the half preserved lemon cut into pieces, and season lightly.

Mix everything together, then put the lid on.

Turn on the slow cooker and cook on the "auto" setting for about 8 hours (all day or overnight).

At the end of cooking, stir again. Place the turkey cutlets on top, put the lid back on, and let cook while you set the table.

Serve immediately and enjoy!
