In a paella pan, brown the seasoned rabbit and chicken over high heat.

Once everything is well browned, add the vegetables cut into small pieces and sauté for a few minutes over medium heat.

Push the vegetables to the sides and place the chopped tomatoes in the center to cook for a bit. After about five minutes, add a teaspoon of paprika and mix everything together.

Fill the paella pan with water to the brim and add the white beans, saffron threads, rosemary, and adjust the salt. Let it cook over medium heat for about 20 minutes. The water level will drop by about 1 centimeter.

At this point, add the rice and bring it to a boil: 7 minutes on very high heat, 7 minutes on medium heat, and 3 minutes on low heat.

Cover with a cloth and let the paella rest for about 5 minutes.
