It's easy to put together, has a nutty crunch, is healthy and absolutely delicious. 😀
Steps

Dry roast the peanuts until golden brown, you can remove the skin lightly, add to a mixer jar to make a coarse powder. Set aside.

Wash, peel & chop the cucumber into very fine pieces.

Place the cucumber in a mixing bowl, add the sugar, salt & lemon juice & most of the fresh coriander. Mix well

Heat the ghee in a tadka pan (tempering pan), add the cumin seeds, slit green chillies, curry leaves and the asafoetida. Allow it to crackle for a few seconds.

Immediately pour the tadka on top of the cucumber mix.

Add the roasted peanut powder, top with the rest of the fresh coriander, toss gently Tastes best with chilled cucumbers. You can top with grated fresh coconut if you wish. 🙂
