Simple & Fluffy Chicken Tsukune Patties for Cherry Blossom Viewing

I killed two birds with one stone here and made something for my son that contains a lot of vegetables, but also something that will help him get used to eating meat.

These are very simple tsukune, just mix together and cook. It takes hardly any time at all!!
These tsukune work great as either a snack or a side dish ♪
If you don't add the sauce, you can make these as lightly-flavoured baby food as well.
These patties can be frozen. Recipe by akane0922

Ingredients

2 servings
  1. 200 gramsMinced chicken
  2. 1/4 blockTofu
  3. 1/4Onion
  4. 1/4Carrot
  5. 1/5Green onions
  6. 1 tbspKatakuriko
  7. 1Egg
  8. 1 tbspSake
  9. 2sprinkles Salt and pepper
  10. 2 tspGrated ginger
  11. For the sauce:
  12. 1 tbspSugar
  13. 3 tbspSoy sauce
  14. 1 tbspSake
  15. 1 tbspMirin

Steps

  1. 1

    First, drain the tofu. If you have time please leave it to drain for about 1 hour. If not, it's fine to give it just a quick drain.

    Finely chop the carrot, onion and spring onion. Add every ingredient that isn't for the sauce or seasoning (sake, ginger, salt & pepper) into a bowl and mix well.

    Add the sake, ginger, salt and pepper and mix until the mixture starts to feel a little sticky.

    Grease a frying pan with some oil, shape the patties into the size you want and cook one side over medium heat for 5 minutes.

    Flip the patties over and cook for a further 5 minutes. Once they have browned, they're ready.

    Mix together the sauce ingredients and add to the frying pan in one go. Mix with the patties and you're done ♪
