Fried Vermicelli with Cabbage like in Nasi Uduk

Back in Jakarta, I used to often buy nasi uduk and just vermicelli from a place across from the Jelambar funeral home, in the Aladin area... but that was years ago. This is an attempt to recreate it because I really miss Indonesia ☺️

Back in Jakarta, I used to often buy nasi uduk and just vermicelli from a place across from the Jelambar funeral home, in the Aladin area... but that was years ago. This is an attempt to recreate it because I really miss Indonesia ☺️
Steps
- 1
Soak the vermicelli in hot water for 4-5 minutes, then drain well. Add 1 tablespoon of chicken oil and mix well, or you can use regular oil.
- 2
Heat a pan and add 1 tablespoon of oil. Once hot, crack the egg and scramble it. Set aside.
- 3
In the same pan, add 1 tablespoon of oil and sauté the shallots and garlic until fragrant. Add the cabbage and sauté until slightly wilted. Add the vermicelli and other seasonings. Mix well. Taste and adjust the flavor and color to your liking. If it's not brown enough, add more palm sugar or sweet soy sauce. If it's not salty enough, add salt or soy sauce. Done. Serve with nasi uduk and crackers.
