  • 2red bell peppers
  • 6tomatoes
  • 2large red onions or 3 small ones
  • 14 clovesgarlic
  • 1habanero pepper
  • 2chicken bouillon cubes
  • 2-inch piece ginger (or 1 tablespoon ground ginger)
  • 1/2 cuptomato paste (about 120 grams)
  • 3 cupschicken broth (about 710 ml)
  • 2 cupsrice (about 400 grams)
  • as needed, oil
  • 2plantains
  • salt, to taste
  • 4chicken drumsticks and thighs
  • 2 tablespoonscurry powder

    Add the tablespoon of ginger, the two tablespoons of curry powder, and the half cup of tomato paste.

    Blend the vegetables in batches, adding just a little oil if needed, but no water. Pour each batch into the pot, cover, and let it cook for about 30 minutes until the liquid evaporates.

    Heat some oil in a skillet and sear the chicken until golden brown.

    In another pot, add 3 tablespoons of the stew with a ladle, place the chicken on top, then add another 2 or 3 tablespoons of stew. Add 1 cup of chicken broth (about 240 ml), cover, and cook the chicken for about 20 minutes.

    Meanwhile, slice the plantains and fry them until golden.

    For the rice, combine 2 cups of rice, 2 cups of chicken broth (about 475 ml), and 2 tablespoons of the stew in a pot. Cover and cook until the rice is done.
