Cooking Instructions

Pour juice into a large saucepan, add honey (if needed, depending on the sweetness of the juice and wine), and all spices. Bring to a gentle boil for 10 minutes.
If you have some cheese/muslin cloth, you can make a bouquet garni so you don't have to fish everything out later.

Squeeze juice from three mandarins and top and tail, then slice the fourth evenly. Add to pot.

Heat to low and add wine and rum. Bring to temperature and simmer for 5-10 minutes and serve.

My family all like Christmas pudding, but it's just not for me. This year I decided to try making a Christmas-style cake for me to have at Christmas, and hopefully win some of the others away from the evil Christmas pudding too ;).I took a red wine velvet cake recipe that I had and altered it by replacing the red wine with mulled wine, and added some Christmas spices to the icing. I am very pleased with the result of my test bake - it's lovely and moist, rich and and the spices come through nicely. Waiting till Christmas now to see if I can win the family over. bruce78952 -

I saved some red wine that didn't taste good.My hubby and I are drinkers, and so we add brandy or rum to up the alcohol content. Add some if you'd like! Adjust the amount of honey to taste.
