Ingredients

  1. 6yellow or white peaches
  2. Extra virgin olive oil
  3. 2 cupsmixed salad leaves
  4. 500 gfresh mozzarella
  5. Handfulbasil leaves, torn
  6. 2 tbsphoney
  7. Salt and black pepper

Cooking Instructions

    Cut each peach in half, remove the stone and then slice each half into four thick wedges. Place the peach wedges in a large bowl and drizzle over some olive oil.

    Heat a griddle pan until searing hot, then add the peach wedges and grill for a minutes or so on each cut side until there are char mark and flesh is starting to soften. (Don’t cook for too long, as you don’t want mushy peaches. You still want the flesh to retain some firmness.)

    Arrange the salad leaves on a large platter and scatter over the peach wedges.

    Tear up mozzarella and dot it amongst the peaches.

    Top with the basil leaves.

    To serve, drizzle generously with olive oil, honey and season with salt and black pepper.
