Ingredients

30 minutes
2 people
  1. 2medium kumara
  2. 2large carrots
  3. 1small onion
  4. 3 clovesgarlic
  5. 1 tspginger paste
  6. 1celery stalk
  7. 1 tspcumin
  8. 1 tspturmeric
  9. 500 mlvegetable stock
  10. 50 gred lentils
  11. Butternut squash (optional)

Cooking Instructions

    Get your ingredients together

    Chop up the onion and celery and sweat in a pan until softened.

  3. 3

    Whilst the onion and celery are sweating, peel and chop the kumara and carrots.

  4. 4

    Once the onion and celery are soft, grate in the garlic and add the ginger, cumin and turmeric and cook for a minute.

  5. 5

    Add the kumara, carrots, lentils, butternut squash and stock to the pan, put on a lid and simmer for about 20 minutes or until the vegetables are soft.

    Blend the soup and then sprinkle some seeds or yeast extract on top as you wish.

    Serve with some bread for mopping up.

I love this style of soup. I often use winter squash and carrots instead of yams or sweet potatoes. Last time I made it I also incorporated some red lentils to provide a bit of extra protein.
