South Indian breakfast dishes are so very popular all over. One of them is Vermicelli Lemon rice which is also called Shevige Nimbe Bhath which is a variation of Lemon Rice and is made in interiors of Karnataka.
It's a dish made from vermicelli of rice, wheat or ragi which is tempered with mustard, curry leaves, dry red chillies and lentils.
Flavoured with ginger, onions and steamed and topped with generous sprinkle of lemon juice which makes it amazingly delicious! It is ideal for both breakfast and main meals. Enjoy.

First, heat 1/2 tablespoons ghee and dry roast vermicelli for 2 minutes till crisp. Keep aside.

Now heat rest of the ghee. Add all the ingredients of tempering and saute well.

Add onion, ginger, green chillies, peanuts and fry well. Then add the vermicelli and stir well.

Then add water and add lemon rice masala.
(I used MTR masala which has a very good taste) Add vegetables, salt and stir. Cook covered till all the water is absorbed and the rice becomes soft. - 6
Then add lemon juice and stir well gently. Serve steaming hot garnished with coriander leaves and grated coconut and enjoy both ways : breakfast or as a full meal.
