Amla or Indian Gooseberry is available mostly during winter in India.It is rich in Vitamin C, iron and essential nutrients and boosts our immunity system.It prevents cold, flu ,coughs.Fresh amla fruit is green in colour and has a tangy bitter taste. This wonder fruit should be included in our diet in any form to keep us fit and healthy. As this fruit has a bitter sour taste ,they can be included in our diet in the form of chutney, pickles,murabba or candy.Serve this tangy sweet and spicy chutney as an aftermeal condiment alongwith any Indian flatbread or with dal rice and papad.

Make slits in amla and pressure cook them with 1/4 th tsp turmeric and 1/4 th tsp salt upto 2 whistles and 80% cooked.Set aside to cool.Slit open and deseed.Either mash or chop into small pieces.Meanwhile roast spices listed under dry roast.Cool and grind to a fine powder in a dry grinder Store in a container.Heat oil and sprinkle paanch phoron.

When the phoron splutters,add grated ginger.Fry and add the deseeded amla(gooseberry).Add red chilli powder,pinch of turmeric and toss. Add sugar and mix well.Pour the amla stock and boil till sugar gets one string consistency and chutney is thick.Turn off heat.Add 1 tsp dry roasted ground bhaja masala. Sprinkle chilli flakes and raisins.Mix well and refrigerate. Serve chilled nutritious amla chutney as an aftermeal condiment alongwith any Indian flatbread or with rice, dal and papad.
