Lettuce and Carrot Frittata

Whenever we hear the word lettuce or see a head of lettuce, we usually think of salad, but there are so many ways to prepare it—soups, purees, frittatas, and more. Life must be pretty sad and monotonous for a lettuce—born, grown, and always ending up as salad. I admit, I always used it the same way... until last week, when my husband kindly asked if I needed anything since he was heading out and could stop by the market. I told him, literally, 'just tomatoes and something else for salads.' When he came back, I was surprised to see three huge heads of lettuce. I looked at them and said, 'What am I going to do with so much lettuce?' He replied, 'They were on sale!' I've always thought a sale is only a good deal if you actually need the item, otherwise it's just unnecessary spending. Anyway, the lettuce was in the house and the promise was kept—here it is, turned into a frittata. Maybe someone else found a lettuce sale and couldn't resist either...

Ingredients

15 minutes
Serves 2 servings
  • 2 cupsfinely chopped lettuce (about 100 grams)
  • 1carrot, grated (about 70 grams)
  • 1/2onion, very finely chopped (about 50 grams)
  • 2 tablespoonsall-purpose flour (about 16 grams)
  • 4eggs
  • 1vegetable or chicken bouillon cube, crumbled
  • 2 tablespoonsvegetable oil (about 30 ml)

Steps

  1. 1

    Heat 1 tablespoon of oil in a skillet and sauté the onion. Set aside.

  2. 2

    In a bowl, combine the lettuce and grated carrot.

  3. 3

    Add the sautéed onion, crumbled bouillon cube, and flour. Mix well to combine all the ingredients.

  4. 4

    Add 2 beaten eggs and mix everything together.

  5. 5

    Beat the remaining 2 eggs in a separate bowl and set aside.

  6. 6

    Add the remaining oil to a nonstick skillet over medium heat. Pour in the mixture before the oil gets too hot.

  7. 7

    Continuously move the skillet in a circular motion so the mixture doesn't stick to the edges.

  8. 8

    After a few minutes, when the eggs in the mixture start to set, pour in half of the reserved beaten eggs and keep moving the skillet until the bottom is lightly golden.

  9. 9

    Using a plate, flip the frittata, return it to the skillet, and pour in the rest of the beaten eggs.

  10. 10

    Continue cooking, moving the skillet as before, until both sides are perfectly golden.

  11. 11

    Serve hot or cold, with white sauce or on its own with your favorite sides.
