Sear and brown oxtail, add dash of olive oil,brush with a bit of flour

Same pot where you browned your meat, add celery,onions,thyme, rosemary, fruit for few minutes

Add your meat to mixture, cook for 2 hours continuously adding beef stock and turning meat around.

Add seasoning salt and pepper, add tomato canned and paste in the last hour, low heat.

Final stage should be all combined together and great aromas coming from pot and taking off the bone.

Add some fresh coriander and serve with any starch and salad #BonApetito
