Slow cooker beef and vegetables

Just prep the ingredients into a slow cooker and leave it to fill your house with that delicious home cook aroma.
If you don’t have a slow cooker you could use a casserole dish and slow cook in oven.
I use a raw roux paste to thicken, but you could use a cornflour slurry if you want to make it gluten-free.

Ingredients

4 people
  1. 1 kgchuck steak cubed
  2. 2carrots peeled and diced
  3. 2onions diced
  4. 2 cupsdiced celery
  5. 2potatoes diced
  6. 4rashes bacon diced
  7. 4 clovesgarlic crushed
  8. 2bay leaves
  9. 1lt vegetable stock
  10. 2 tablespoonbbq sauce
  11. 2 tablespoontomato sauce
  12. 3 tablespoonsoy sauce
  13. Salt and pepper
  14. 60 gbutter
  15. 60 gflour

Cooking Instructions

    In a very hot pan, Brown the steaks and bacon in 3-4 batches. Deglaze the pan with stock or wine.

    Put seared steaks, carrots, onions, celery, bay leaf, Potatoes, garlic and stock in slow cooker. Fill with water to completely cover ingredients. Cook on low till beef is tender, minimum 2 hours.

    Meanwhile make your roux (thickener) mix flour and butter together to a paste

    Find your flavor balance using more or less of soy (for salt) bbq (smoky/sweet) tomato (umami/sweet)

  5. 5

    Bring stew to a gentle boil, and pinch several little 1/2 teaspoon bits of roux into stew. Mix through well and repeat to desired thickness.

    Serve with rice, pasta, lentils (like in picture) or just a tasty loaf and butter.
