For a salad or a light meal, we suggest a whole wheat orzo salad with turmeric, cherry tomatoes, and bell peppers.

In a pot, add the turmeric and orzo, then cover with plenty of salted boiling water. Stir and cook according to the package instructions, about 8-10 minutes.

Meanwhile, prepare the dressing. In a bowl, combine the vinegar, oregano, lemon juice, water, and olive oil. Mix well and set aside.

Place all the ingredients in a large bowl. Taste and add more salt and pepper if needed. Mix well and serve, sprinkling with a little extra chopped fresh parsley if desired.

Finely chop the onion, bell pepper, and parsley, and cut the cherry tomatoes in half. Remove the pasta from the heat, submerge it in cold water to stop the cooking, and drain well.
