Ingredients

Serves 4 servings
  1. 7 ozwhole wheat orzo (about 200 grams)
  2. 1 teaspoonturmeric
  3. 1 tablespoonwhite balsamic vinegar
  4. 1/2 teaspoondried oregano
  5. 1/2 tablespoonlemon juice
  6. 3 tablespoonsolive oil
  7. 1 tablespoonwater
  8. Plenty of water for boiling the orzo
  9. Salt
  10. Freshly ground black pepper
  11. 1/2red bell pepper
  12. 1/2red onion
  13. 1 tablespoonfresh parsley
  14. 14cherry tomatoes, halved

    In a pot, add the turmeric and orzo, then cover with plenty of salted boiling water. Stir and cook according to the package instructions, about 8-10 minutes.

  2. 2

    Meanwhile, prepare the dressing. In a bowl, combine the vinegar, oregano, lemon juice, water, and olive oil. Mix well and set aside.

  3. 3

    Place all the ingredients in a large bowl. Taste and add more salt and pepper if needed. Mix well and serve, sprinkling with a little extra chopped fresh parsley if desired.

  4. 4

    Finely chop the onion, bell pepper, and parsley, and cut the cherry tomatoes in half. Remove the pasta from the heat, submerge it in cold water to stop the cooking, and drain well.
