Crushed onion or tomato or crushed masala ginger garlic and crushed khada masala...do you know what great taste it can generate....It's something I tasted by My landlady on Deepawali years back...in Delhi preparing for civils...
I prepared for my friends many times during research...while every friend praised me,I knew I m a copy cut....And she is the originator,I mean my land lady aunty of my PG.She is from UP and UP people have their own way....of creating masala ...Thank you Aunty that's all For can say and Love you for everything you did for us ...

Ingredients

3 servings
  • 1big size Cauliflower with big florets
  • as requiredOil ,
  • to tastesalt
  • 1/2 tsp ,haldi
  • Masala to be repared
  • 1 inchGinger,
  • 8garlic cloves,
  • 4 green chilli crushed and 4 slit
  • 1Onion thin sliced big,
  • 2 tomato (small),
  • 1 tspCrushed or powdered kasoori methi
  • 1 TSPKetchup to adjust excess sour taste,
  • 1 tspsabut jeera
  • 3Crushed laung
  • 3,,elaichi pepper roasted and crushed
  • Chaunk
  • 2 TSP,Ghee
  • 2Sukhi mirch ,
  • 2 pinch,hing
  • 1 /2 TSPKashmiri chilli,
  • 1bay leaf

Steps

30 mins
  1. 1

    Heat a pan add oil 2 tbsp,add gobhi roast it on high heat allow it be brown and moisture free

  2. 2

    Add jeera, slices of onion,once golden brown add crushed ginger garlic,chilli leaving slitted ones...

  3. 3

    Cook till oil oozes out add gobhi,do med-high heat alternative cooking,so that you get gobhi not mushy,yet masala is cooked
    Add ketchup to adjust tomato taste,add powdered kasoori methi and khada masala powder,
    Then add chaunk
    Add Coriander leaves

  4. 4

    SERVE WITH POORI....and butter Paratha...
