I absolutely love Indian cuisine, and without a doubt, one of my favorite dishes is Red Lentil Dahl.
Steps

Rinse the lentils in cold water. Wash the vegetables, chop the onion, and dice the carrot and pumpkin.

Heat a tablespoon of oil in a high-sided pot, add the garlic clove, crushed mustard seeds, bay leaf, peeled and chopped ginger, turmeric, curry powder, and ground black pepper. Stir often, being careful not to burn them.

Add the chopped onion, carrot, and pumpkin, season with salt, and let them stew for about ten minutes.

Add the lentils, cover with broth, and bring to a boil. Then lower the heat and let it cook for about fifteen minutes.

Add the coconut milk, bring back to a boil, and let it cook for 2-3 minutes, or until fully cooked.

Remove the bay leaf and garlic clove, and serve with chopped cilantro. I didn't have cilantro available, so I served it with chopped parsley.
