I make dahi vada or dahi bhalla usually during festive occasions like Diwali or Holi or when we have a get together at home. This recipe serves 4 people, if each person is served two bhallas. Here I have made bhalla papadi chaat.

Wash and Soak urad dal in water for 4 hours. Then transfer it in a mixer and grind to a fine paste. Add salt and asafoetida and mix. Keep aside for 15 minutes. Then whisk it for 5-7 minutes till it becomes fluffy.

Heat oil in a wok. Place a tb spoon full of dal mixture in oil and deep fry till golden brown colour. Flip the side and fry from other side also. You can fry 5-6 bhallas at a time.

Remove it in a bowl.

Now soak half of bhallas in bouled water for 30 minutes. Then squeeze bhalla carefully and remive its excess water and keep aside in a plate.

Now mix sugar in curd and whisk it thorougly. Sugar should be mixed with curd. Adjust the consistency of curd by adding water. Arrange papadis in a serving bowl. Place squeezed bhallas over it. Pour curd over it.

Now sprinkle salt, chaat masala, red chilli powder and roasted cumin seeds powder over it. Pour sounth over it. Add boondi. Pour green chutney, chopped grapes in halves and chopped coriander leaves. Add a tb spoon of curd again over it.

Serve it immediately.
