Ingredients

1 hr + 45 minutes
12 servings
  • 250 gms- whole wheat flour
  • 2 tablespoons- brown sugar
  • 1 tsp- instant yeast
  • 2 tablespoons- butter
  • 1/4 cup- milk
  • 2 tablespoons- raisins
  • 1 tablespoon- cranberries
  • 1.5 tsp- spice powder (cinnamon, cardamom,
  • 2 tablespoons- finely chopped pineapples
  • 1 tsp- orange zest
  • 1/4 cup - 1/2 cupWater - (as required)
  • 1 tsphoney (brush after baking)
  • 2 tablespoonswhole wheat flour + 2 tablespoon of water to make slurry

Steps

1 hr + 45 minutes
  1. 1

    Mix whole wheat flour, yeast, brown sugar, spice powder, pineapple, raisins, cranberries, milk.

    Sprinkle water and knead a soft dough. It takes 15-20 minutes. Add butter and knead until the dough is extremely soft and non sticky.

    Cover with lid... allow it to proof for 1 hr / until it doubles in size.

  4. 4

    Grease a baking tin with oil. (Tin size 8'.)

  5. 5

    Divide the dough in 12 portion's and tuck each portion tightly and arrange them in the baking tin.

    Allow them to proof for 20-25 minutes.

  7. 7

    Make a thin paste by mixing whole wheat flour + water.

  8. 8

    Preheat oven @180'c.

  9. 9

    Fill the whole wheat flour paste into piping bag and make cross on the buns.

  10. 10

    Bake @180'c for 25-30 minutes.

  11. 11

    Once baked brush honey.

  12. 12

    After 10 minutes demold and allow it to cool on wire rack.

  13. 13

    Hot Cross Buns are ready to serve.
