Mix whole wheat flour, yeast, brown sugar, spice powder, pineapple, raisins, cranberries, milk.

Sprinkle water and knead a soft dough. It takes 15-20 minutes. Add butter and knead until the dough is extremely soft and non sticky.

Cover with lid... allow it to proof for 1 hr / until it doubles in size.

Grease a baking tin with oil. (Tin size 8'.)

Divide the dough in 12 portion's and tuck each portion tightly and arrange them in the baking tin.

Allow them to proof for 20-25 minutes.

Make a thin paste by mixing whole wheat flour + water.

Preheat oven @180'c.

Fill the whole wheat flour paste into piping bag and make cross on the buns.

Bake @180'c for 25-30 minutes.

Once baked brush honey.

After 10 minutes demold and allow it to cool on wire rack.

Hot Cross Buns are ready to serve.
