Rasmalai Mousse

Well during festive time we enjoy a lot of sweets but at the end we have leftover sweets as well.Today I share with such recipe where you can make new dessert a mousse using leftover Rasmalai. Also, when we try new recipe that doesn't always go perfect in first attempt! Imagine you made rasmalai & it turn out to be good in taste but chewy or not so perfect in texture!😥 would you waste it? Rasmalai Mousse
Well during festive time we enjoy a lot of sweets but at the end we have leftover sweets as well.Today I share with such recipe where you can make new dessert a mousse using leftover Rasmalai. Also, when we try new recipe that doesn't always go perfect in first attempt! Imagine you made rasmalai & it turn out to be good in taste but chewy or not so perfect in texture!😥 would you waste it? Take a pack of heavy milk (35% or more) & put that in frizzer for 30 mins.

Meanwhile take 6 leftover rasmalai & grind it in a mixer along with rasmali milk to make a fine & smooth paste. Do not add more milk just about 6 to 8 tbsp of rasmalai flavoured milk is enough. Keep it aside.

Next step is to prepare for mousse.For that first, take about 6/7 pieces of white chocolate and melt it into microwave.once melted add 1 tbsp of heavy milk to it to make it white chocolate ganache consistency.

After 30 mins take heavy milk/room creme from fridge and pour it in a big deep bowl to make whipped creme.

Take hand mixer and start beating the heavy milk for about 2 /3 mins on medium low speed.After 3 mins,it might have started to thicken. At this point add about 6 tbsp sugar and cardamom powder to it.

Again start whipping the creme until it forms stiff peaks. It might take another 2 to 3 mins.

Once creme is ready add rasmali paste,melted white chocolate ganache and cardamom powder to it.

Mix & fold gently with spatula.At this point if you want to have more yellow color for mousse then you can add few drops of yellow food color. But it is totally optional.

Now pour this into serving cups.Ganish with nuts,saffron,rose petals and pieces of rasmalai on the top.

Let it cool in fridge for about 30 mins & enjoy!
