For those of us with cholesterol issues (I've been on medication for years and don't diet), we shouldn't indulge too often since it's high in cholesterol, but once in a while, I treat myself. It's very nutritious, as it's rich in vitamins A and D, iron, and carbohydrates.

Peel the garlic and crush it with a garlic press. Place in a bowl and add the parsley, 2 tablespoons of oil, and the wine, then mix.

Season the liver slices with salt and pepper. Add a tablespoon of oil to a grill pan, and when it's hot, cook the slices on both sides until they are golden brown.

Add the herb mix, sauté over low heat to avoid burning the garlic, and turn off the heat when it's golden.
