  • 1 lbRed Kidney Beans, soaked several hours and drained
  • White Rice, cooked
  • meat --
  • 7 ozSmoked Sausage, sliced thick
  • 1 lbHam Hocks and/or Salt Pork
  • liquids --
  • 4 cupsWater
  • 4 cupsStock
  • to tasteTobasco,
  • veggies --
  • 1md Onion, chopped
  • 1sm Green Pepper, chopped
  • 2 stalksCelery, chopped
  • 5 clovesGarlic, chopped
  • seasoning --
  • 1.5 tspPepper, various
  • 1 tspBasil
  • 1/2 tspOregano
  • 1 tspThyme
  • 1 tspGarlic Powder
  • 1 tspOnion Powder
  • 1 tspDry Mustard
  • 1Bay Leaf

Steps

  1. 1

    Saute all the chopped veggies

  2. 2

    Slow cook in Crock-Pot everything except rice and smoked sausage, 8 to 10 hours

  3. 3

    Discard Ham Hocks and Salt Pork at end of cooking

  4. 4

    Smash some of the beans against side of pot

  5. 5

    Add sliced smoked sausage, heat through, and serve over rice
