Make a checklist; keep required ingredients within reach.

Spice mix: Take one table spoon of coriander seeds, black pepper, and cumin. Dry roast over medium heat in a skillet for a minute or two. Cool. Powder it in a blender. Use 1 teaspoon of the spice mix for fries.bm

Wash the veggies, make thin slices with a sharp knife. Place the slices is a bowl. Add salt, shake, transfer to a wire basket or sieve. Let it stand on a plant for 10 minutes. Salt will take out the bitter juice from the veggie.
Sun dry the slice by spreading them on a plate in single layer - 4
Over medium heat heat oil in a skillet. Stir in the sun dried veggie slices. Roast, In 3 -4 minutes crispy crunchy slices will be ready Turn off the stove; add tamarind paste, spice mix, red chili powder, turmeric powder and salt. Mix well tasty crispy healthy slice are ready to taste. Enjoy.
