Masala Bitter Gourd

Bitter Gourd is a popular summer vegetable known for its bitterness but it is a store house of antioxidants. It is packed with several important nutrients.
But when kids are asked to have bitter gourd they completely avoid it and keep nagging that it is bitter in taste.
So to convert kids from saying NO to YES for consuming bitter gourd , it is suggested to serve them MASALA BITTER GOURD.
This dry curry is so yummy that kids can hardly say no to bitter gourd and ask for again and again.
Kids can enjoy the benefits of this delicious dry curry with roti / plain paratha in breakfast.

Steps

Slice bitter gourd, marinade with salt and keep aside for 15 minutes.

Assemble ingredients, make paste of tomato and keep aside.

In moderately heated pan add oil, deep fry bitter gourd slices after squeezing. Deep fry them and keep aside.

In moderately heated pan add oil, add the five spices and allow to sizzle then add chopped onion + green chilli and sauté till golden brown.

Then add the tomato paste + salt + 1 tbsp + water and cook till water from tomato evaporates. Then add all spices + 2 tbsp water so that masala doesn’t burn.
Fry till masala leaves oil. - 6
Then add the fried bitter gourd, mix gently, cover and cook for 6-7 minutes and bitter gourd coats with the spices.

Keep in stand by mode for 1 minute, dish is ready to serve.

Serve with roti / plain paratha and let kids enjoy the benefits of it.
