Ingredients

2 people
  • 5Peaches
  • 2balls mozzarella (drained)
  • 1 handfulbaby leaf salad
  • 6-8 slicesprosciutto
  • 1lemon
  • 1-2 tbspcold pressed rapeseed oil
  • Salt and pepper
  • 10-15 leavesmint

Steps

20 minutes.
  1. 1

    Start by preheating a chargrill pan. Quarter and stone the peaches. Place cut side down and chargrill on both flat sides to get good charred lines.

    Scatter these charred peaches on a bed a of salad mixed in with mint leaves, top with torn mozzarella and torn prosciutto. Drizzle with cold pressed rapeseed oil and a squeeze of lemon. Season generously.
