This is my go-to dish for summer in Tuscany! When I want something fresh without having to cook... here it is! Even easier and faster with canned butter beans!

Peel and thinly slice the onion. Peel the cucumber and slice it as well. Wash the tomatoes and cut them in half. Place these ingredients in a bowl.

Cut the bread into cubes and put it in a small bowl with the vinegar and enough water to cover. Let it soak for 5 minutes, then squeeze out the excess liquid and add the bread to the vegetables.

Add the drained butter beans and season everything with salt and olive oil.
