Gujarati Malpua / Wheat flour and jaggery malpua

Gujarati malpua is a traditional Gujarati sweet which is prepared using wheat flour and jaggery. This type of malpua is flavoured with fennel seeds, black pepper and cardamom powder. We do not have to make sugar syrup separately for this malpua as there is jaggery in the batter. This dish is prepared during shitla satam in almost every household. It tastes delicious served with dhudhpak or rabdi.

First of all add jaggery to the water to make jaggery water and keep it aside. Now in another bowl, add wheat flour, cardamom powder, black pepper and fennel seeds. Mix everything well.

Now add jaggery water to the flour mixture and whisk it to make a lump free batter. Cover it and let it rest for 4 hours. You can even keep it for 6 to 8 hours as the more time it gets to get fermented, it will give better results. After 4 to 6 hours, add some water to it and mix it to make a thick free flowing consistency batter. The batter should not be very thin. I have added roughly little more than a 1/4th cup of water to get the right consistency.

Now take a small flying pan and heat oil in it at medium heat. When the oil is hot, add a ladelful of batter in the centre of the pan. You do not have to make a circle out of it as it will take the round shape on its own. Now fry it until golden from both sides and crunchy on the edges.

Prepare all the malpuas in the same way and sprinkle poppy seeds over it.

Malpua can be served with dhudhpak or rabdi. It can be even served as it is.
