Korokke Croquettes
Japanese croquettes, not much different from the ones we usually make, can include more ingredients, as always to each one's taste.
Cooking Instructions
- 1
Boil the potatoes.
- 2
Finely chop the onion (brunoise) and sauté in a pan.
- 3
Season the meat with salt and pepper, and when the onion is sautéed, add the meat. I added a bit of oregano.
- 4
When the potatoes are cooked, mash them. It's better to use a masher or a fork. I added a little milk to make it more consistent.
- 5
Once the mash is ready, add the meat with the onion and mix.
- 6
Shape the mixture into small croquettes.
- 7
Coat them in flour, then egg, and finally panko or Japanese breadcrumbs.
- 8
Fry in hot oil (about 350°F), then drain on paper towels.
- 9
Enjoy them!

I've been making these croquettes for about 15 years and is my children's favorite dish of mine. The key is condensed milk and raw onion.I used to add sugar to the filling, but I realized that condensed milk results in a creamier finish. The raw onion will cook through when the croquettes are deep-fried, and will add flavor.I've based these tips off cookbooks. Bite-sized Croquettes with Cheese Bite-sized Croquettes with Cheese
I came up with these croquettes when thinking of ways to eat mozzarella cheese. I love how the cheese melts when it's heated. You can either boil or steam the potatoes. If microwaving, peeling will be difficult once cooled, so work while it's hot. Be careful not to burn yourself. When forming balls, make sure the cheese doesn't come out. If it sticks out, it will melt and dissolve when deep-fried. Recipe by yaburie cookpad.japan -
