Mom always made mouth watering Badhushas for Krishna Jayanthi. Sridhar loves it. Though a little reluctant to deep fry, I made Badhusha yesterday for the celebration of Krishna’s Birthday. I have a tendency to deconstruct tradional recipes to place my stamp on it.

Mom always made mouth watering Badhushas for Krishna Jayanthi. Sridhar loves it. Though a little reluctant to deep fry, I made Badhusha yesterday for the celebration of Krishna’s Birthday. I have a tendency to deconstruct tradional recipes to place my stamp on it.

Prepare a checklist. Keep the necessary items near the cooking area.

Add flour to a bowl. Make a small well in the middle and add melted butter, baking powder and soda. Add cinnamon powder and salt. Mix them together using your fingers. Add curd and milk with your mix with fingers. Do not knead, make a soft smooth silky dough. Cover with a cloth and rest for 15 minutes.
Then make small balls. Place the ball in the middle of the palm and gently press it with the other palm. Press the middle of the padusha with a finger to make a small dent. - 4
Gently poke with the fork around. (Image). It would help in uniform cooking I made 7 padhushas. Ready for frying
syrup:
In a heavy saucepan over medium heat, add sugar and ¼ cup water and bring to a boil. Add cardamom. Stir. Make syrup for a string consistency. Add lemon juice and stir. Lemon juice will prevent crystallizing. Cover and switch off the stove.
To fry : Heat oil in a heavy pan over medium heat. Fry on low heat. Gently turn the padushas with a spoon a few times - 5
Patushas will will swell and float to the top. Increase the heat a little for a few seconds, When both sides turn golden brown remove them from oil, place them in the syrup. After 5 minutes transfer thme to another plate.
Sprinkle dark chocolate nut powder (my chocolate included nuts) on top to decorate. You may also sprinkle any coarsely chopped nuts on the top. Badusha is ready. Offer them to Krishna. “Krishnarppanamasthu.” Share with family and friends. Have a good celebration
