Rinse, peel and chop the pumpkin.

Heat the oil in a kadhai and add the asafoetida, curry leaves, rai dana, fenugreek, fennel, and cumin seeds. When they begin to splutter, add the ginger, chilies, and lastly dried methi leaves.

Sauté till lightly coloured and add the pumpkin.

Stir-fry on high heat till it looks glossy.

Add salt, turmeric, garam masala, coriander powder, chili powder,mango powder, and sweetener. Mix well.

Reduce heat, cover, and simmer till cooked through. Stir 3-4 times.

Add dhania leaves and stir fry without lid.

Serve Hot.
